Building Quinoa Fiesta Salad

Eating for fitness provides a unique set of rules and challenges. You want something that is going to be filling and sustaining, without being heavy. You want something that is rich in proteins, carbohydrates and fats, without being difficult to digest. You want something that is full of nutrients but without being full of a million ingredients. Sound like an impossible feat? Not so! I have a recipe for you today that hits all of the above mentioned markers, whilst still being easy, quick and delicious!

Salad:

  • 2 cups cooked quinoa
  • 1 cup cooked (or sprouted if your keen!) green lentils
  • 1 bell pepper – chopped
  • 1 cup chopped carrot
  • ½ cup diced celery
  • ½ cup diced cucumber
  • ¼ cup diced red onion
  • 1 medium apple – diced
  • 5 tbsp chopped parsley
  • 5 tbsp chopped cilantro

Dressing:

  • 1 Avocado – mashed
  • 2 lemons – juiced
  • 1 tbsp apple cider vinegar
  • ½ tbsp honey or other liquid sweetener
  • Pinch of salt & pepper

To prepare this dish, all you have to do is combine all the salad ingredients in a bowl. For the dressing, simply mash your avocado and add in the rest of the ingredients, stirring with a fork until it becomes a smooth (ish) mixture. Or you can blend it in a blender or food processor. Pour the dressing of the salad and enjoy!

You will be getting complete protein from the quinoa, slow burning carbohydrates from the lentils, quick energy from the veggies and apple, good healthy fats from the avocado, and a wide range of vitamins and minerals found in all ingredients present!
