Succulent Summer Watermelon Salad

Watermelon is one of those iconic summer times treats. And for good reason! It is crispy, refreshing, sweet and a treat that really should be reserved for the summer months. Who doesn’t have a fond memory of eating watermelon as a kid, having the juice drip down your arms and all over your clothes, to your mother’s dismay? And most people can remember having a watermelon seed spitting contest at one time in their lives.

Here is a simple summer salad that is not only packed with nutrition, but also all the bright, fresh and crisp flavours of the season!

What you need:

  • 6 cups watermelon (about 1 medium – large watermelon) cut into 1 inch cubes
  • 2 large grapefruits – sectioned (Here is how to section a grapefruit)
  • Juice of 2 limes
  • 7-8 leaves of mint, finely chopped
  • Sprinkle of sea salt (preferably Himalayan sea salt)

What you do:
Place watermelon and grapefruit in a bowl. Add your lime juice, mint and sea salt, toss with your hands.  Enjoy!

What you get:
The watermelon in this salad is going to provide you with 21% of your daily requirements for vitamin C, as well as 17% of your daily Vitamin A needs. Watermelon is also rich in a carotenoid called Lycopene. This nutrient is best known for its cancer fighting abilities. If you choose to use Himalayan sea salt in this dish, you will be providing you body with all 84 minerals that it needs to function, like calcium, potassium and of course, sodium. This salt will also help your body to hold onto extra water, which taken in small amounts can help to keep your body properly hydrated.
